Turkey Quinoa Patties with Sundried Tomato

Ingredients

  • 2 tbsps Extra Virgin Olive Oil

  • 500 grams Extra Lean Ground Turkey

  • 1 Yellow Onion (small)

  • 2 Garlic Cloves, crushed

  • 1 cup Quinoa (cooked)

  • 2 tsps Italian Seasoning

  • 1/2 tsp Paprika

  • 1/2 tsp Sea Salt

  • 1/4 cup Sun Dried Tomatoes (packed in oil)

  • 1/2 cup Parsley (chopped)

Directions

  • Preheat oven to 400F

  • Saute onions and garlic over medium heat in the olive oil, just until they start to change colour.

  • In a separate bowl, mix ground turkey, with remaining ingredients and then add the onions and garlic.

  • Mix well and shape into 6 – 8 hamburger style patties.

  • Place patties on a parchment lined baking sheet and cook for 15 min or until cooked through.

Leftovers
Refrigerate in an airtight container for up to three days or freeze for up to two months.

A Versatile Recipe!
Shape as meatballs for a pasta and sauce dish or shape into patties for a burger. Use patties as a main dish served with veggies of choice – roasted are a Winter favourite.
