One Pan Roasted Salmon

  • 4 servings Salmon Fillet (Wild )

  • 6 cups Green Beans (fresh, washed and ends trimmed)

  • ​2 cups Cherry Tomatoes

  • 1 Zucchini (sliced)

  • 1/4 Red Onion (cut into wedges)

  • 2 tbsps Extra Virgin Olive Oil

  • 1/4 tsp Sea Salt & Black Pepper (or to taste)


  • Preheat oven to 450 degrees. Line a baking sheet with parchment paper.

  • ​​Toss green beans, cherry tomatoes, zucchini and red onion together with olive oil and sea salt. Bake on prepared sheet for 10 minutes.

  • Season the salmon fillets with sea salt and pepper. Add the salmon fillets to the baking sheet with the veggies and bake for another 8 – 10 minutes until the salmon is done.

  • Divide veggies between plates and top with salmon. Enjoy!

No Salmon
Use any type of fish fillet. Baking times will vary depending on thickness.

Vegan Option
Use roasted chickpeas instead of salmon.
